Once a month I play Yahtzee with a sweet group of ladies that live within the same neighborhood. I’m a newcomer to this group as well as an outsider since I don’t live in the neighborhood, but I have been welcomed in with open arms.
Not only do I love Yahtzee, I love the food and socialization that happens when we play. Everyone brings a snack or appetizer to share. I love the mystery of what will show up. This month I decided to try out a new appetizer. As a reminder, my 30 Day Challenge this month is to make new recipes including one drink, one appetizer, one entree, and one dessert.
This appetizer was super easy to construct, and I used ingredients I already had on hand.
Zesty Bean Dip
1 can refried beans
1 small, 8oz container of sour cream
1 bag of shredded cheddar cheese
1 package of ranch dressing mix
Mix all the ingredients over a medium heat in a saucepan until melted together. Serve warm with tortilla chips or pretzels. Although the dip isn’t “pretty”, it’s tasty.
Because there were so many snacks, I had some dip leftover. With the leftovers you could spread a good amount in a tortilla shell, roll it up, and toast in a pan to make a burrito. This would make a hearty lunch or dinner.
