On our way to see RENT at Appleton’s PAC, we made a point to stop at Draft Gastropub for dinner. This is the second time I have eaten here, and it hasn’t disappointed. The food is elevated pub food for sure. Think gourmet burgers and sandwiches. There are also dinner plate options, so the choices will appeal to a variety of palates.
If you’ve been to Draft in the past, you must know that the restaurant has had a recent location change from its original operation to a new location in Grand Chute where it continues to feature rustic decor along with the infamous horse statue that greets guests in the entrance.
First, it is pretty busy inside—which is true for most good restaurants— so there’s a good chance there will be a little wait. Take this opportunity to grab a drink at the bar.
Draft’s menu still has many of its popular options in both small and large plates plus brick oven pizzas and gourmet pub burgers. With the move came more choices including additional steaks, sandwiches, and burgers to please any palate and price point. This current experience, I ordered the draft burger. It was amazing! Caramelized onions, crisp bacon with slightly melted swiss cheese, mustard aioli sauce, and an egg on top. My mouth is watering thinking about it. Plus the picture speaks for itself.

My fabulous friend and dinner companion, Abby, chose the salmon sandwich—a take on a BLT. Which features fresh salmon, with the standard bacon, greens, and tomato, but the sandwich is elevated with avocado and shishito remoulade which is a seafood dressing mixed with a East Asian chili pepper.

The hand-cut truffle fries are fantastic and come with an aioli dipping sauce. Overall, we were two happy gals.
As a heads up, this restaurant is closed Sundays, so plan accordingly. Draft is a great choice for an upscale pub experience; consider it for your next night out in Appleton.
